Catering Chef Manager
A new and exciting opportunity has arisen for a Catering Chef Manager working at the Birmingham Dental Hospital. The post requires someone who is passionate about fresh cooking and is hands on, whilst being able to lead a team and support all service requirements. The individual will be responsible for the day to day operation of the catering service, including retail, vending and cafe services.
With an opportunity to promote income generation for both the restaurant and cafe services provided. This will include all function requests for in-house and external requests ensuring food and hygiene standards are met.
A good knowledge will be required to plan and cost menus; whilst leading on raising the orders and supplies for the catering department. Ensuring the computerized systems are live and up to date to support with stock control and supporting up to date financial information. A flexible approach is required for this position to ensure service standards and expectations are met and sustained, eg overseeing weekends, evenings, and Bank Holidays if and when required.
Main duties of the job
The direct management of the Catering Operatives at Birmingham Dental Hospital.
Delegated budget responsibility for Catering Birmingham Dental Hospital.
The post holder will be accountable for ensuring value for money relating to goods and services procured.

MAIN DUTIES
- Responsible for the safe and effective management of catering services retail and advising the Catering Services Lead on matters specific to the service.
- Responsible for leading the catering services team, to manage HR issues for their staff and also support other Facilities colleagues as needed. Requesting support from the Catering Services Lead when required.
- Implement national standards relating to facilities management and support the facilities management in setting standards accordingly in liaison with operational and clinical managers.
- Make use of and implement all catering management systems and Hazard Analysis of Critical control Point Documentation (HACCP) to ensure food hygiene and safety.
- Correctly monitor and record all deliveries and storage, stock levels, maintaining the correct standards at all times.
- Comply with the high standards of personal and kitchen hygiene at all times in line with HACCP working principles.
- Follow the daily, weekly and periodic cleaning schedules for cleaning of all food production equipment, food storage areas and production areas.
- Accurately record and report any faults relating to catering equipment, kitchen fabrication and main services to catering whilst following correct procedures to ensure continuation of normal service.
- Ensure Food Safety and Health and Safety legislation is adhered to within the main kitchen and caf area by actively promoting a safety conscious environment.
- Ensure the Environmental Health and Food Standards Agency policies and Procedures are adhered to.
- Promote a flexible approach to meal provision in line with customer requirements.

Catering Duties and Responsibilities
- To ensure the highest standards in food produced, service and delivery are maintained at all times.
- To ensure all food items are stored correctly ensuring good stock rotation and temperature control.
- To maintain a high standard of cleaning in all areas in accordance with the departmental cleaning procedures.
- Maintain due diligence in all work procedures and practices throughout, for example, the preparation, cooking, service and storage stages through temperature control, high standards of personal hygiene, monitoring forms along with a clear understanding of HACCP and Control of Substances Hazardous to Health (COSHH). Ensure all HACCP documentation is completed by the catering operatives and checked on a daily bases. This is important to ensure the the Trust acheives the highest star rating for Food Hygiene.
- Assist in the Environmental Health Officer Audits to demonstrate compliance.
- Ensure the activities required for the preparation and distribution of food to service users is met to standards expected.
- Deal with any queries and complaints and escalate to the Trust Catering Services Lead.
- Ensure compliance with the safety management systems when using machinery, reporting any Health and Safety related issues to the Catering Services Lead.
Management and Leadership Responsibilities
- Develop and empower all members of your team to perform to high standards and innovate.
- Ensure supportive staff management arrangements are in place and carry out personal development reviews for direct reports. Ensure all staff in your team/s have annual PDRs resulting in specific objectives and effective personal development plans in line with the knowledge and Skills outline framework.
- Develop staff knowledge and skills to promote equality and diversity and address inequalities both in employment and service delivery. Ensure specific equality and objective are included in PDRs.
