Main duties of the job
Ensuring the efficient use of resources in the production of hygienic, safe, high quality meals produced in a safe and hygienic manner for patients and staff while providing technical leadership to the kitchen brigade.
Supervise and direct the work of the kitchen brigade to ensure all meals are produced in a safe and timely manner to the required standards meeting all Food Hygiene regulations.o Prepare and monitor daily production planning schedules and team briefs to meetall requirements and maximise efficient use of resources.o Plan and prepare daily restaurant menus which reflect the flair and skills of thebrigade while meeting customer choice requirements.o Plan and develop Service User menus including for themed days, special dietsand special requests etco Plan and develop Service User menus including for themed days, special diets and special requests etc.o Monitor the service of meals in the restaurant for quality, presentation,temperature and customer satisfaction.o Maintain storage facilities, stock and waste levels and records for all goods and foodstuffs ensuring temperature controls and rotation to meet all Food Hygiene requirements.o Establish and monitor systems for the receipt of goods to ensure quality, quantity and temperature.o Inspect and monitor the food service environment and equipment for defects, faults and cleanliness and remedy as required to meet Health and Safety and Food Hygiene regulations.o Provide technical leadership and training to create a professional environment and well-motivated team.o Ensure the team follows recipes and methods.o Contribute to the continued development of Food Services.o This job description is not meant to be exhaustive.
